Lord God, You know us old cowhands is forgetful. Sometimes I can't even recollect what happened yestiddy. We is forgetful. We just know daylight and dark, summer, fall, winter, and spring. But I sure hope we don't ever forget to thank You before we is about to eat a mess of good chili. We don't know why, in Your wisdom. You been so doggone good to us. The heathen Chinee don't have no chili, ever. The Frenchmens is left out. The Rooshians don't know no more about chili than a hog does about a sidesaddle. Even the Meskins don't get a good whiff of it unless they stay around here. Chili eaters is some of Your chosen people. We don't know why You so doggone good to us. But Lord, God, don't ever think we ain't grateful for this chili we about to eat. Amen.

“Chili May Control Insulin Spikes. Anyone concerned about type 2 diabetes should know that keeping insulin levels in check can reduce the risk that the hormone will lose its effect on controlling blood sugar. A group of Australian researchers has proposed that chili might help do the trick. The team tested chili/cayenne pepper mix on 36 healthy overweight (but not obese) adults whose average age was 46. First, they tested insulin levels after three weeks of bland food and, then, an unseasoned hamburger eaten following an over-night fast. A week later, they tested insulin levels after the participants ate burgers seasoned with the chili spice mix. These tests showed that insulin levels were lower than they had been after the unseasoned burger a week earlier. After repeating the whole cycle but with the chili mix added to the participants' regular diets, insulin levels remained lower than they had been after three weeks of bland foods. The researchers said they aren't sure how chili acts to control insulin levels and
called for more studies to find out. The study was published in the July 1, 2006 issue of the American Journal of Clinical Nutrition” (Candace Knight-Arevalo)

“Pat Pilchiek has just gotten her test results back today and the results are melanoma. She will have a die test and further surgery on Wednesday morning in hopes they get it all this time. We are asking for prayers from all over for our friend Pat. I will have the Austin and San Antonio Holy Yolie and Holy Mary working on it. But we need your help folks. Also, while you are on your knees or upright talking to the Lord, be sure and thank him for our daily blessings. Have a Blessed Holiday season.

“Gail Aldridge passed away on Thursday, November 16. Gail’s wish was to be cremated. Gail was the wife of former CASI Director Bobby Aldridge. Gail and Bobby lived in the Shreveport, Louisiana area for many years before relocating to Tyler, Texas. Please keep the Aldridge family in your thoughts and prayers.” (Pat Krenek)

“My name is Lee Pruiett, a lot of you know me or have heard about me and the Garland Elks. Let me tell you a little about this project I will working on and I need your help. I was raised in a Childrens home because my mother worked there. The name of the place is Boles Home. They are trying to raise money to by a van. They are asking everyone to save labels from the Campbell soup cans. I as a Chili cook am asking for the help of all to save all your label so I can send them to the home. I know some of you are saving for other projects and I understand, but if the rest of you can send them to me I would appreciate it. Thanks.
